Frequently Asked Questions

What is kombucha?

Kombucha is naturally fermented & carbonated tea that is produced using a living culture called a SCOBY (symbiotic culture of bacteria and yeast).

Does kombucha contain alcohol?

The fermentation process naturally produces a small amount of alcohol. Home-brewed kombucha usually contains between 1.5% and 2% alcohol.

Can you drink kombucha during pregnancy?

The fermentation process naturally produces alcohol and green and black tea contains caffeine, both of which should not be consumed in large quantities during pregnancy and breastfeeding. We advise pregnant and breastfeeding women to consult their doctors before consumption.

What is fermentation / What happens there?

Fermentation is the process by which microorganisms change the chemical composition of food and beverages. In the case of kombucha, this is a symbiosis of bacteria, yeast and sugar. Everyday foods such as yogurt, sauerkraut and sourdough bread are all fermented products. The chemical change results in a combination of longer shelf life and better taste. In the case of kombucha, fermentation transforms the time-honored tea into a fizzy, tangy and slightly sweet drink.
